Make a horizontal incision through the thickest part of the breast, but don’t cut all the way through .Open the chicken breast like a book, creating a butterfly shape.
Prepare the Marinade:
In a bowl, combine olive oil, lemon juice, Nando’s Peri-Peri sauce, minced garlic, smoked paprika, oregano, salt, and pepper.
Mix well to form a marinade.
Marinate the Chicken:
Place the butterflied chicken breasts in a shallow dish or resealable bag.
Pour the marinade over the chicken, ensuring it coats both sides.
Marinate for at least 30 minutes, or preferably overnight for maximum flavor.
Grill or Broil:
Preheat your grill or broiler to high heat.
Place the marinated chicken breasts on the grill or broiler pan.
Cook for 4-6 minutes per side, or until the internal temperature reaches 165°F (74°C).
Serve:
Serve the grilled butterfly chicken with your favorite Nando’s sides, such as peri-peri chips, coleslaw, or corn on the cob.
